Pumpkin Soup with Tinapa

‎🧂 Ingredients:
‎For the Soup:
‎2 cups kalabasa, peeled and cubed
‎1 small onion, chopped
‎3 cloves garlic, minced
‎2 tbsp butter or oil
‎2 cups chicken broth (or water with bouillon)
‎Salt and pepper, to taste 
‎½ cup all purpose cream (for added richness)

‎For the Fusion Tinapa Flakes:
‎3pcs galunggong fillet (flaked)
‎1 tbsp olive oil or corn oil
‎Pinch of garlic powder
‎Pinch of white pepper powde

‎Garnish:
‎Mint or parsley (optional)

‎Cooking Instructions:
‎1. Sauté the Aromatics:
‎In a pot, heat butter/oil. Sauté onion and garlic until fragrant.

‎2. Cook the Kalabasa:
‎Bring to boil the kalabasa for about 2 to 5 minutes or until soft. 

‎3. Blend Until Smooth:
‎Use a blender or immersion blender to puree the soup. Return to the pot. Add all purpose cream if using. Season with salt and pepper.

‎4. Prepare the Fusion Tinapa Flakes:
‎In a small pan, heat oil. Mix tinapa flaked and garlic powder. Just toast until aromas out. Then, mix it with pumpkin for gourmet twist. Save a little for toppings. 

‎5. Assemble:
‎Pour soup into a bowl. Top with tinapa flakes and garnish with mint or herbs.
