Bangus Curry

Ingredients:

  • 180g bangus fillet, fried
  • 200g coconut milk
  • 1 tbsp curry powder
  • 1 tsp fish sauce
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • Salt and pepper to taste

👨🍳 Procedure:

  1. Fry the bangus. Fry the bangus fillet until golden brown. Set aside.
  2. Sauté the aromatics. In a pan, sauté garlic and onion until fragrant and softened.
  3. Prepare the curry sauce. Add curry powder and stir for about 30 seconds. Pour in the coconut milk and fish sauce. Simmer gently for 5–8 minutes until slightly thickened.
  4. Season and combine. Add salt and pepper to taste. Place the fried bangus fillet into the curry sauce and simmer gently for 2–3 minutes.
  5. Serve. Transfer to a serving plate and spoon the creamy curry sauce over the bangus.
