Ingredients:
- 170 g Salinas, deboned, flaked, and fried
- 180 g noodles of your choice
- 1 tbsp peanut butter
- 1 tbsp chili flakes
- ½ tbsp soy sauce
- 1 tsp sesame oil
- 1 garlic clove, minced or grated
- 1 tsp calamansi juice
- ½ tsp sugar
- ¼ cup noodle water
- 3 stalks onion leaves, chopped
Procedure:
- Cook the noodles. Boil the noodles according to the package directions. Before draining, set aside ¼ cup of the noodle water.
- Fry the Salinas. Pan-fry the flaked Salinas until golden and crispy. Set aside.
- Make the sauce. In a large bowl, mix the peanut butter, chili flakes, soy sauce, sesame oil, garlic, calamansi juice, chopped onion leaves and sugar.
- Loosen the sauce. Add the warm noodle water a little at a time, stirring until smooth and creamy.
- Toss. Add the hot noodles and toss until fully coated.
- Top and serve. Top with the crispy Salinas and chopped onion leaves, then serve right away.
