Rice Paper Tinapa Crunch

Ingredients:
Tilapia fillet, flaked (make sure no bones remain)
Round Vietnamese rice paper, 16 cm
25 g garlic
2-3 coriander roots 
½ tsp black pepper 
1 tbsp coconut sugar
1 tbsp peanut butter
1-2 tbsp fish sauce 
Fresh coriander leaves

How to Prepare:
1.Grill or toast the rice paper until lightly crisp. Set aside.
2.Pound together the garlic, coriander roots, and black pepper until fine and aromatic.
3.In a bowl, mix the pounded ingredients with coconut sugar, peanut butter, and fish sauce until well combined.
4.Apply a thin layer of the sauce mixture onto the grilled rice paper.
5.Top with flaked tinapang tilapia and fresh coriander leaves.
6.Grill again for a few seconds until the sauce slightly caramelizes and the toppings stick to the rice paper.
7.Serve immediately while crisp.
